- Make the dough:
- In a large bowl, mix flour, ground nuts, powdered sugar, and salt.
- Cut in the cold butter with your fingers or a pastry cutter until the mixture resembles coarse crumbs.
- Add vanilla and gently knead into a smooth dough. Do not overwork it.
- Wrap the dough in plastic wrap and chill for at least 30 minutes.
- Shape the cookies:
- Preheat oven to 170°C (340°F).
- Take small pieces of dough and roll them into little logs, then curve into crescent shapes.
- Place on a parchment-lined baking sheet, spacing them slightly apart.
- Bake:
- Bake for 12–15 minutes, or until lightly golden on the edges (not brown!).
- Coat with vanilla sugar:
- While still warm, gently roll each kifli in the vanilla-powdered sugar mixture. Handle with care—they’re delicate.
- Cool & Serve:
- Let cool completely. Store in an airtight container. They taste even better after a day or two!
