Prekmurska gibanica Hungarian 🇭🇺

Here’s a recipe for Prekmurska gibanica – a traditional layered pastry from the Prekmurje region (Slovenia), also beloved in Hungarian cuisine near the border 🇭🇺:


Prekmurska Gibanica (Layered Pastry)

Ingredients

(For a baking dish about 33×23 cm / 13×9 in)

For the pastry:

  • 500 g (4 cups) all-purpose flour
  • 1 egg
  • 1 pinch salt
  • 200 ml (¾ cup + 1 tbsp) water
  • 1 tbsp oil

For the fillings:

  1. Poppy seed layer
    • 200 g ground poppy seeds
    • 80 g sugar
    • 100 ml milk
  2. Cottage cheese layer
    • 500 g cottage cheese or farmer’s cheese
    • 2 eggs
    • 80 g sugar
    • 1 tsp vanilla sugar
  3. Apple layer
    • 500 g tart apples, peeled & grated
    • 80 g sugar
    • 1 tsp cinnamon
  4. Walnut layer
    • 200 g ground walnuts
    • 80 g sugar
    • 100 ml milk

For brushing between layers:

  • 200 ml sour cream
  • 2 eggs (beaten)
  • 100 g butter (melted)
