
Instructions:
- Make the Dough:
- Mix flour, ground nuts, sugar, and salt in a bowl.
- Add butter and rub it into the dry ingredients until crumbly.
- Add egg yolks and vanilla, kneading quickly into a smooth dough.
- Wrap in plastic and chill for 1 hour.
- Cut the Cookies:
- Roll out the chilled dough on a floured surface to about ⅛–¼ inch (3–5 mm) thickness.
- Cut into rounds (about 2 inches / 5 cm).
- Place on a baking sheet lined with parchment.
- Bake:
- Bake in a preheated oven at 350°F / 180°C for about 10–12 minutes, until lightly golden.
- Let cool completely.
- Assemble:
- Spread jam on the bottom of one cookie, then sandwich with another.
- Dip the tops in melted chocolate.
- While the chocolate is still wet, sprinkle with nuts, sprinkles, or coconut if desired.
- Serve:
- Let chocolate set before serving.
- These cookies keep beautifully in a tin for several days and even taste better as the flavors meld.
