- 2 lbs pork liver
- 2 lbs pork jowl or fatty pork shoulder
- 2 cups rice (uncooked)
- 1 large onion (finely chopped)
- 2 cloves garlic (minced)
- 1 tbsp lard (or oil)
- 1 tsp ground black pepper
- 1 tsp sweet Hungarian paprika
- 1 tsp marjoram
- Salt (to taste)
- Natural pork casings (soaked, rinsed)
