  • 2 lbs pork liver
  • 2 lbs pork jowl or fatty pork shoulder
  • 2 cups rice (uncooked)
  • 1 large onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 tbsp lard (or oil)
  • 1 tsp ground black pepper
  • 1 tsp sweet Hungarian paprika
  • 1 tsp marjoram
  • Salt (to taste)
  • Natural pork casings (soaked, rinsed)
