- Sauté the onions:
Heat lard or oil in a large pot over medium heat. Add onions and cook until golden and soft. - Add garlic and beef:
Stir in the garlic and beef cubes. Sear meat until browned on all sides. - Season:
Remove from heat briefly and stir in the paprika (this prevents bitterness). Add caraway seeds if using. - Add vegetables:
Return to heat. Add bell pepper, tomatoes, and carrots. Stir well. - Simmer:
Pour in the broth or water. Bring to a boil, then reduce heat. Cover and simmer for 1.5 to 2 hours, until beef is tender. - Add potatoes:
Stir in diced potatoes during the last 30 minutes of cooking. Add more liquid if needed. - Taste and serve:
Season with salt and pepper. Garnish with chopped parsley.
Tips:
- Serve with crusty bread or nokedli (Hungarian dumplings).
- For spicier goulash, add a dash of hot paprika or chili flakes.
